As a food photographer in Colorado Springs, one of my greatest joys is collaborating with local restaurants that pour heart and soul into their craft. Recently, I had the pleasure of photographing the vibrant flavors and inviting atmosphere of Amanda’s Cantina & Fonda, a beloved Manitou Springs staple known for its colorful plates, authentic Mexican dishes, and lively spirit.




The Story Behind Amanda’s Cantina & Fonda



Located near the scenic base of Pikes Peak, Amanda’s Cantina & Fonda captures the heart of Mexican hospitality. The moment you walk in, you’re greeted with the warmth of terracotta tones, rustic décor, and the unmistakable aroma of fresh, handmade tortillas.


Their team’s commitment to locally sourced ingredients and traditional recipes made every dish a joy to photograph. Each plate seemed to tell a story — one of passion, heritage, and creativity.


To me, this kind of restaurant embodies the local spirit I love documenting. It’s not just about food; it’s about connection, culture, and craft.




Collaboration and Creative Vision



Before the shoot, I met with Linda, the Director of Marketing, to understand their goals for the session. We discussed Amanda’s brand identity, lighting style, and how to bring their story to life visually.


Together, we focused on three main elements:


  1. Authenticity – staying true to the restaurant’s cultural roots.

  2. Texture and color – highlighting the richness of the ingredients.

  3. Emotion – conveying warmth and community through every frame.



This kind of collaboration is what makes food photography so rewarding — blending marketing vision with visual storytelling to create something that feels alive and real.




The Art of Food Styling



Food photography is all about balance — light, shape, and story. Working closely with Amanda’s talented chefs, we styled every dish with intention. From the delicate drizzle of mole sauce to the vibrant garnishes of pico de gallo, each detail was arranged to evoke appetite and emotion.


Mexican cuisine naturally lends itself to photography. The vivid reds, yellows, and greens of fresh ingredients radiate life and energy, while the deep, earthy tones of traditional dishes add depth and warmth to every composition.




The Hero Dishes



Every shoot has its stars, and at Amanda’s, the hero dishes shone bright. Sizzling fajitas, perfectly grilled carne asada, and colorful tacos al pastor made the studio smell like heaven. I used a combination of natural window light and controlled artificial lighting to make each dish pop with color and dimension — ensuring the viewer could almost taste the flavor through the photo.
